The Hope of Spring


We recently spent a Saturday on the farm admiring the new calves, "riding" the gate, and "driving" the tractor with Granddaddy. Everything is turning green and the cows are enjoying every blade of grass. The geese have built a nest and laid eggs near the pond. Granddaddy is feeding the pond fish in hopes they'll bite the hooks of our grandchildren as we fish with them when the weather warms up more.


Signs of spring abound as I walk around my yard and drive throughout our area. These are some of the blooms I'm seeing in our yard. Our weather is so strange just now. It can be warm in the morning, cool and windy by noon, and storming by sundown! Of course, the rain helps rid us of the pollen that is coating everything this week.

Our garden is beginning to show real signs of life--onions, potatoes, and green peas. We had spring onions in a salad I prepared last night. The recipe came from Miss Belle's Tearoom in Cameron, NC years ago. I hope you enjoy it!

1 box long grain & wild rice (cook by directions--omit butter)
1 jar pimento (drained)
1 small jar artichokes (drained and chopped)
1 cup celery (chopped)
1 can black olives (optional)
1/2 cup mayonnaise
2 green onions (chopped)
1 teaspoon curry
Mix all ingredients and serve cold or warm. Chicken can be added.
